Hungarian Potato Paprikas

A fast and delicious simple Hungarian traditional meal.

Serves 4

4 medium sized Russet potatoes
1 medium yellow onion
1 red or green bell pepper
2 medium tomatoes
1 tbsp paprika
2 tsp salt
1 tbsp olive oil
1-2 cups water

  • peel and slice potatoes first into halves lengthwise and then into 1/2 inch wide wedges.
  • peel and dice the onion.
  • dice the bell pepper and the tomatoes.
  • in a 3 qt saucepan heat the olive oil and saute the onion, salt, and bell pepper until the onion is soft, about 5 minutes.
  • add the paprika, diced tomatoes and 1 cup of water and stir together.
  • add the potatoes, stir, and enough water to cover them and then heat to simmer for approximately 20 minutes or until the potatoes are cooked (still slightly firm).
  • serve as a main dish with French bread and a salad of your choice.
Note: The traditional Hungarian recipe uses sliced hot sausages in the recipe. You can add the sausage along with the potatoes when cooking.
