Hungarian Lentil Soup

1 cup lentils
1/2 large or 1 whole small yellow onion
2 or 3 cloves garlic minced
1 carrot diced
2 stalks celery diced
1/2 potato diced
1 tsp Hungarian paprika
dash of ground pepper
2 tsp Better Than Bouillon Vegetarian vegetable stock
1/4 cup small flat noodles broken up

  • place all ingredients except noodles into a 3 quart saucepan.
  • add water to near full and simmer ~35-40 minutes, until carrots and lentils are cooked, stirring occasionally.
  • add noodles, simmer 10 more minutes.
  • serve with fresh bread of your choice.
