Dill Zucchini Saute

Serves 4

4 medium zucchini
1/2 large yellow onion
1 tsp chopped fresh dill
1 tsp canola oil
1 tbsp water
1/2 tsp salt
1/8 tsp pepper (or to taste)

  • peel and dice the zucchini into 3/4 inch size cubes.
  • place diced zucchini into a microwave safe dish with a tablespoon of water.
  • microwave zucchini on high for 3 minutes.
  • peel and chop onion finely.
  • in a large skillet, saute the onion, dill and salt in the oil until the onion becomes soft.
  • add the cubed zucchini to the onion/dill mix and stir together while sauteing.
  • add the pepper and continue to saute until the zucchini softens a bit more or less to your preference.
  • serve as a side dish with your favorite meal.
Tip: I chop and freeze the fresh dill in tsp packages and thaw them out as needed when cooking. It is much better than using dried dill and just as good for sauteing as fresh.
